Pumpkin & Sweet Potato soup

Pumpkin and Sweet potato soup 

                                       


Ingredients

Oil-1/2 tbsp

Garlic-2 cloves

Onion-1/2 medium size onion

Pumpkin and sweet potato 

Veg stock cubes-2

Dried rosemary-1 tsp

Pepper powder as per the spice tolerance level

Water as needed

Coconut milk 1/2 can (keep 4 few spoons to garnish)

Roasted nuts of your choice to garnish


Method: 

1.Heat oil ,add in 2 clove of minced garlic and half of the onion finely chopped.

2.Saute well, add pumpkin  and sweet potato roughly chopped, 2 cubes of veg stock , a tsp of dried rosemary and needed amount of water.


3.Add salt ,pepper powder and cook till all veggies are done. Once every piece is cooked,do the smash test. Then add needed amount of coconut milk to make it smooth and creamy.Give it a good mix. (can add cream or milk too)and switch off the flame.


4.Once it cools down blend well using a  stick blender.(Option- If cooking for kids add a handful of shredded cheese of your choice,cover and cook just for the cheese to melt and blend into the soup )


5.Our soup is ready.You can garnish it with few spoons of coconut milk/nuts of your choice/even garlic bread (again bacon bits for meat lovers works well ) and enjoy.            


NOTE: Feel free to try combinations of veggies/herbs  of your choice

Butternut Pumpkin soup

                              Vegan Butternut soup

                                   
Serves 4

Ingredients

Oil-1/2 tbsp

Garlic-2 cloves

Onion-1/2 medium size onion

Butternut pumpkin- 1/2 size

Veg stock cubes-2

 Dried Parsley-1 tsp

Pepper powder as per the spice tolerance level

Water as needed

Coconut milk 1/2 can (keep 4 few spoons to garnish)

Almond slivered to garnish

(i used carrot leaves for a change)

Method: 

1.Heat oil ,add in 2 clove of minced garlic and half  onion finely chopped.

2.Saute well, add butternut pumpkin roughly chopped, 2 cubes of veg stock , a tsp of dried parsley and needed amount of water.


3.Add salt ,pepper powder and cook till all veggies are done. Once every piece is cooked, add needed amount of coconut milk to make it smooth and creamy.Give it a good mix. (can add cream or milk too)and switch off the flame.


4.Once it cools down blend well using a  stick blender.Our soup is ready.You can garnish it with few spoons of coconut milk/almonds and enjoy.

CLEAR  MIX VEG SOUP

It's raining it's pouring..💦
The old man is snoring ..😴

What else is needed to soothe your soul,other than a bowl of CLEAR VEG SOUP ðŸ¥£
So here is my recipe ,

INGREDIENTS

Olive oil

Ginger

Garlic

Onion

Carrot

Cabbage

Green onions

Peas

Corn

Veg stock powder

Soy sauce

Apple cider

Salt & pepper

Tomato ketchup

Water

METHOD

Heat a pan with some olive oil saute for a minute or two finely chopped

Ginger, garlic,onion🧅
Carrots🥕 ,cabbage ,green onions
Peas & corn ðŸŒ½
( Add veggies of your choice like mushroom ,beans etc )
Add
2 tsp of veg stock powder
1 tsp of soy sauce
2 tsp of apple cider
Salt & pepper to taste
Few tsp of tomato ketchup
Needed amount of water

Cover and cook until veggies are done ( according to the crunch you want)
Do a taste test and adjust accordingly.
Enjoy!

Pumpkin

Sweet potato

Veg stock powder

Oregano

Water as needed

Coconut milk

Method: 

1.Heat oil ,add in 2 clove of minced garlic and half onion finely chopped.

2.Saute well, add about a cup each of pumpkin and sweet potato roughly chopped, one tbsp of veg stock powder, a tsp of dried oregano and needed amount of water.


3.Adjust salt and cook till all veggies are done. Once every veggie is cooked, add few spoons of coconut milk (can add cream or milk too)and switch off the flame.


4.Once it cools down blend well using a blender.Soup is ready.You can garnish it with pepitas,crushed pepper or croutons..

Veg clear soup

         A traditional soup from ancestral diary


   This was a soup which my grandmother used to make on  a wooden fire during the rainy days.This was one of the methods adopted by our forefathers for making the kids eat vegetables and ghee,which are usually disliked by majority of the toddlers.The aroma  that spreads in the house while cooking  itself attracts the members and brings them to the kitchen .I still remember me as a kid waiting for the soup to be poured in the bowl..
Here comes the RECIPE..

Serves-3
Ingredients

Lady finger/okra/vendaykka/bhindi- 4
Tomato-1
Shallots- 4 to 5
Green Beans- 4 to 5
 Note:can add veggies of your choice like the greens mushrooms,onions etc
Ghee- 1 tsp
Pepper powder as per your taste
Salt as needed
Few drops of edible oil
Water- 2 1/4 cups

Method

1.Chop the veggies as per your wish .Keep them aside.

2.Place a pan ,once its hot add a teaspoon of ghee along with few drops of oil so that the ghee won't burn.

3.Add all the veggies and saute for a minute.



4.Now add salt and toss them up.


5.Time to add in the pepper powder.Mix well.


6.Cover and cook till the veggies are half done.


7.Open the lid ,add water,cover and cook till the veggies are completely done.Bring the soup to a boil.Once it starts bubbling switch off the flame.


8.Check for the salt and pepper powder and adjust accordingly.Our soup is ready to be served..Enjoy..!!
                 NOTE:     you can either strain and serve the liquid part alone
                                                 or
                             can serve along with the veggies as we do...

Tapioca pearl Soup

                                                                      Sago Soup
This recipe was shared by my Dear Friend Jayashri Baleri & Vidya Pai in a very popular food Group Konkani Khann Anik Jevan {konkanikhann.blogspot.com } .It is a very easy recipe and can b cooked in a jiffy.A perfect comfort food during heavy down pours.Let us see how to cook this soup..!
Ingredients

Sago/sabudana- 2-3 tbsp
Water-3/4 cup
Salt to taste
Cumin seeds/jeera/nalla jeerakam-1/2 tsp

Vegetables i used
Ginger-1/4 tsp
Garlic-2 pods
Capsicum-2-3 tbsp
Carrots-2-3 tbsp
Onion-2-3 tbsp

To Garnish
Pepper powder
Lemon juice

Method

1.Soak 2-3 table spoon of sago in 3/4 cup of water for a minimum of one hour.

2.Now Pressure cook them by adding 3/4 cup of water ,salt,cumin seeds,finely chopped ginger,garlic,carrot,capsicum and onions.Till you here 3-4 whistles.

3.Once the pressure goes off ,carefully open the lid.{At this time if the soup appears very thick ,you can add water according to your preference and just boil it.}

4.Just before serving sprinkle some pepper powder and lemon juice.{you are free to add garnish of your choice like tomato sauce,cilantro or coriander leaves}.Enjoy
