Layered Indian Bread

                                                 Kerala Porotta 

Serves:2
Ingredients

For making the dough:
All purpose flour/maida-2 cups
Salt to taste
Sugar-1 tsp
Milk-3/4 - 1 cup
oil- 1 tsp (for brushing on the dough)

For making the gum
All purpose flour-3 - 4 tbsp
oil- 2-3 tbsp

For pan frying
oil as needed

Method
1.Take maida, salt, sugar in a mixing bowl and mix well.

2.Now add milk little by little instead of water and make a soft and smooth dough.

3.Once dough is done ,brush it with a 1 tsp of oil .Cover with a wet kitchen towel and leave it on the desk for a minimum of 1 -2 hours.Meanwhile we can  make the gum and keep it ready

Note:For making the gum,take a small bowl add 3 tbsp of maida and 3 tbsp of oil.Mix well and make a paste out of it.


















 4.After that knead  the dough again for few  minutes.Pinch balls of equal sizes.

5.Dust the rolling board as well the balls and roll them into thin circles as much as possible.

6.Now apply a spoon of gum & spread it nicely all over the circle.

7.Now cut thin strips from the thin circle .Pick the strips one by one .Finally, take them all together and stretch them gently.

8.Now start rolling them ...


9.Secure the end by sticking it to the back side of the ball.


10.Apply the gum again all over the spiral ball.

11.Repeat the same process with rest of the balls.Keep them covered with a wet kitchen towel.

12.Now take each spiral ball and roll into small circles.

13.Now heat a griddle /tawa . Cook both sides well till you attain light brown spots on both the sides.

14.Now stack all the cooked porotas

15.Now crush them from all the sides.This step is important .Do not neglect this step .

16.Now our layered Porotas are ready to serve with the curry of your choice.. 

Easy Cauliflower greens with pepper

                            Cauliflower greens stir fry
                                
                                     

Serves:2
Ingredients

Cauliflower greens- 1 bunch (has 8 leaves in it)
Oil- 1 tsp
Mustard seeds-1/2 tsp
Dry red chilli-1
Salt to taste
Water- 1.4 cup
Pepper powder-1 tsp
Turmeric powder- 1/4 tsp optional

Method
1.Wash and clean the greens several times in running water and finely chop them.Keep them aside.

2.Heat a teaspoon of oil in a pan.Add mustard seeds and allow them to pop up.Once done add in the dry red chilly.Stir for a second.

TEMPERING IS DONE USING OIL, MUSTARD SEEDS AND DRY RED CHILLI

3.Now time to add the chopped greens along with salt and 1/4 cup water.

GREENS +SALT+WATER IS ADDED

4.Give it a good toss

MIX MIX
5.Cover and cook till done.

COVER AND COOKING TILL IT IS DONE
 6.Once done add in a teaspoon of pepper powder.Mix well.

PEPPER POWDER IS ADDED

7.Our greens are ready to serve.I served the greens with rice gruel and pickle.Enjoy

Methi ka parata

                           Fenugreek  leaf Indian bread

         

Serves:2

Ingredients

For making the dough
Methi leaves /fenugreek leaves- 2  small bunch
Wheat flour-2 cups
Green chilly-1 -2
Ginger-1 tsp finely chopped
Garlic-5-6 pods finely chopped (optional)
Oil- 1 tbsp
 Hot water as required for making the dough

Spice powders used
Salt to taste
Turmeric powder-1/2 tsp
Ghee for applying on the paratas

Method

1.Wash and clean the methi leaves for few times. Chop them finely. Keep aside.

2.Take a large mixing bowl add 2 cups of wheat flour along with finely chopped methi leaves,ginger,garlic,green chilly,salt and turmeric powder.Mix well.

3. Now add hot water and mix. Knead the dough for few minutes so as to attain a smooth and soft texture.Occasionally add little oil if it sticks on to your hands.

4.Once the dough is ready pinch equal sized balls from it.

5.Dust the balls in the wheat flour and roll them out into circles.

6.Now heat a tawa /griddle and cook the paratas on both sides by applying ghee/butter/oil of your choice.

Rice Gruel

                               Kanji /paej

Rice Gruel is something that reminds me of my life in Kerala and nothing else will be a BON APPETITE for Keralites &  especially for the Gowda Saraswat Brahmins(GSB) out there.It is such a comfort food that fill my mind and soul  & I am ready to have it 365 days 24/7.That is why a lot of memories flash into my mind when I think about this ultimate simple dish that anchors my mind to my native.

Memories down the Lane
          : After a tiring exam  once I push open THE DOORS  the first thing  
I enquire is about whether my paej has become ready & the answer will be 'Yes'..hahhhhhh a feeling of relaxation glues on my face..
           : After a week's travelling and restaurant food  sessions we will be dying to reach home and once we reach, amma will tell,Have a shower and come fast we will have some  paej and some ukkari (stir fry)oh..that feeling of comfort we used to get when having it is beyond all the fun we had during our travelling..
          : Once our tickets are confirmed, the first thing I will do is to call my amma and tell her ..'ma we will be there for lunch & once she asks what special dishes you guys want ??
               Answer will be given in a jiffy .. '.ma I want  paej and the phone will be passed on to my hubby.I know the answer is not so pleasing to them as they are waiting to shower there love by cooking a feast for us on our ARRIVAL after long duration of living apart. ..
               :  hey can we have paej and ukkari(simple stir fry) for tonight's dinner..???Nothing else in the world can make a kerala  house wife happy than these words form her husband..

         This refreshing  one pot meal which requires no hard work to prepare and  can be eaten with whatever your mind craves for is an additional benefit for the wives.Once we have this energy booster, all that tiredness will be washed off in no time 
    

Serves : 2
Ingredients

Red boiled rice- 1 cup
Water -5 cups

Method

1.Handpick any dirt or small pebbles if present  along with the  rice grains.

2.Wash and clean the rice in running water several times.Meanwhile pour 5 cups of water into the cooker and switch on the flame so that water will start boiling.

  2.Now , add the rice grains into the pressure cooker.

3.Close the cooker with its lid.Switch the flame to high .Remove the vent weight ahead.Keep it aside.

4.Wait for the steam to gush out through the vent tube.

5.Once it comes out, put the vent weight & again switch the flame to low.

            5.Wait till you hear 4 whistles.Then switch off the flame.

6.Once pressure comes down fully, we can open the lid and our rice gruel is ready to serve..

Instant Wheat Dosa

                           Godumai dosa/gova polo/gothambhu dosa

   

Cuisine :Gowda saraswat brahmin
Serves: 2

Ingredients
Wheat flour-2 cups
Salt to taste
Water as needed

Method

1. Take a large mixing bowl add in the dry ingredients wheat flour and salt.

2. Give it a mix.now add water and make the batter to a dosa  batter consistency.Make the batter lump free.

Note:  For a variation you can add finely chopped shallots orcu,in seeds too in the batter and follow the same procedure.

3.Heat a crepe pan pan or dosa griddle .Drizzle little oil.Once the griddle is  hot , pour a ladle full batter and spread it to make circles.If you wish you can sprinkle little oil on its top and on its sides too.
 
SPREAD THE BATTER TO FORM CIRCLES
4.When one side is cooked properly, flip it off and cook the other side too.

FLIP IT OFF & COOK WELL
5.Our instant wheat dosa or crepes are ready to serve.Serve it with chutneys or curry or pickles of your choice.

Steamed red rice cake

                                 Puttu  or Chembhavu puttu 
                                    

Cuisine:Kerala
Serves-2

Ingredients

Red Rice flour- 1 1/2 cup
Salt to taste
Water as needed to wet the flour
Coconut scrapings or grated veggies(carrots,chopped cilantro,onions etc )as needed
PRESSURE COOKER STEAMER

Idli steamer or traditional puttu steamer or pressure cooker steamer

Method

1. Take rice flour in a mixing bowl add salt .Mix the dry ingredients with your hands

    2. Now start sprinkling water little at a time and mix the flour.

3. The fine powdered texture of the flour  will change and it will begin to crumble.

4. When you take a hand full of flour and press in between your fist it should hold the shape that is the right consistency and when you drop it  should crumble.

Note:-Too much water will make it hard
          - Too little water makes it to remain as powder itself and will taste raw. (be careful while adding water)

5. Now take your pressure cooker, fill half with water close the lid, remove the whistle and heat it up.

6. Meanwhile we can layer the puttu  in the gadget(steamer) .
    - begin by keeping the hole disc at its bottom.

     - Now add coconut scrapings        
     -Then add 2 handful of flour
     -Again layer with  coconut scrapings
         Followed by
 -2 handful of flour  &  Ending with coconut scrapings

7.Once steam rushes out through the small tube present on the upper portion of the lid ,place the steamer correctly on the lid & steam for 15 minutes.

7. Once done switch off the flame. Wait for few minutes. 

8.Now hold the steamer tube parallel to the plate and with the help of a skewer, gently and slowly push the hole disc so that the puttu will slip onto the plate.


    9.SERVE WITH CURRY OF YOUR CHOICE..ENJOY

Passion fruit juice

                                  Passion fruit juice

     

                                              
Serves:1
Ingredients

Passion fruit-1                          
Water-1 cup
Sugar-1 tsp                                                                       
 Ice cubes -2(optional)

Method

1.Cut the fruit into 2 halves.

2.Scoop out the flesh from both the halves and pour into the glass.

3.Add in a teaspoon of sugar.

4.Pour a glass of water too and mix well till the sugar dissolves.

5.Add 2 ice cubes into it.Our juice is ready to serve.                    
Note: It contains Vitamin C,B Vitamins-riboflavin and niacin ,dietary fiber as well..
