Dry prawns roast


                                Unakka chemmeen roast


Serves-2
Kerala Cuisine

Ingredients

Dry prawns- 1/3 cup
Shallots-3 -4
salt to taste
Chilly powder-1/2 tsp

Onion-2 medium sized
Curry leaves -a handful
Coconut scrapings-2 -3 tbsp
 Oil-2 tbsp

Method

1.Wash and clean the sun dried prawns and keep them aside.

2.Slice the onions and shallots and keep ready the coconut scrapings.

3.Now take the prawns,shallots in a mixing bowl and add salt to taste and red chilly powder.Mix them up and keep aside for 10 - 15 minutes.

4.Once done heat 1 tbsp of oil in a pan ,once hot add the prawns mix and start to fry them.

5.When it is half done add in the rest of the ingredients like onion slices ,curry leaves and coconut scrapings.Toss well till the onions are soft and golden brown in color.

6.Continue to saute till oil starts leaving from the sides of the pan.

Note:Flame should be kept low.
        :If the mixture sticks add in the rest of 1 tbsp of oil little by little & mix them up 

7.Do a taste test and adjust the spices.  Our dish is ready to serve..ENJOY..!!!

Dry prawns curry Kerala style

                                    Unakka chemmeen curry


Serves- 2
Kerala Cuisine

Ingredients

Dry prawns- 1/2 cup
Water as needed
Oil-1tbsp + 1tsp
Shallots/pearl onion/kunjulli-1/4 cup chopped
Green chilly-1
Garlic-4 -5 pods crushed

To grind
Coconut gratings-1/3 cup
Cumin seeds/nalla jeerakam-1 tsp
Salt to taste
Chilli powder- 1- 1/2 tsp

Method

1.Wash and clean the dried prawns thoroughly and keep them aside.

2.Heat 1 tsp of oil in a tadka pan and dry roast this cleaned prawns for 2 -3 minutes.

                   


3.Slit the green chillies.Crush the garlic pods and chop the shallots.Keep them ready.

4.Grind all the ingredients given under the label 'TO GRIND' to a not so smooth paste and keep it aside.

5.Heat 1 tbsp of oil in a kadai ,once it is hot add in the shallots,green chilly slits & crushed garlic pods and saute till they attain a light brown brown color.

6.Now add in the tossed dry prawns and give it a good mix and saute for 2 -3 minutes.

7.Add 1/2 cup of water and cook the prawns till they are done.

8.Once the prawns are done add in the ground paste.Clean the mixie jar by adding 1/4 cup of water in order to avoid wastage,Pour it into the curry.

9.Give a taste test and adjust the salt and chilly powder.Bring the curry to a boil.

10.Our Dry Prawns Curry is ready to serve .
Enjoy with steamed rice of your choice..!!

PRAWNS PAKODA

                                                      Prawns pakoda

Serves:1

Ingredients

Prawns-27 small prawns
Maida/all purpose flour-1 tbsp
Corn flour-1/2 tsp
Water-1 tbsp
Pepper powder- 1- 1 1/4 tsp
Salt to taste
Lemon juice from quarter of a lemon
Oil for deep frying

Method

1.Wash ,clean and de-vein the prawns.

2.Marinate it with salt,pepper powder and lemon juice and keep aside for few minutes.
3.After 5- 10 minutes add in the maida and cornflour and mix well.
4.Pour a tablespoon full of water and make it to a pakoda/fritter  batter consistency.
5.Heat oil in a kadai,once it is hot deep fry them.
6.Transfer them on to a kitchen towel so as to absorb excess oil.
7.Our PRAWNS PAKODA IS READY TO SERVE..Enjoy!!!

Prawns curry with coconut milk Kerala style

                                  Kerala style - Chemeen palu curry

Serves-3/4

Ingredients

Chemeen/prawns-300g
 Oil-tbsp+1 tsp(strongly recommend coconut oil)
Mustard seeds-1 tsp
Ginger-1 inch piece
Garlic-4/5 pods
Shallots/pearl onion/kujulli/ulli-1/3 cup
Tomato-2
Haldi/turmeric powder-1/2 tsp                                                                                                 Malli podi /coriander powder-1-2 tsp
Red chillli powder/mulagu podi-1-2 tsp
Salt-1-tsp
Thick coconut milk-1 1/4 cup
 Curry leaves-a handful

Method

1. Wash, clean and de-vein the prawns. Keep it aside.

2. Heat coconut oil in a pan; once it’s hot add mustard seeds. Allow them to pop up.

3. Now add in finely chopped ginger and garlic and saute for few minutes.

4. Now it’s time to add in the sliced shallots. Saute till they become soft and translucent.

5. Add all the spice powders. Give them a good mix.

6. Add the chopped tomatoes & little salt and cook till they are mushy. If the mixture sticks to the bottom of the pan you can add 1 -3 tbsp of water and mix well and cook.

7. Pour in the thick coconut milk, salt and bring it to a boil.

8. Now time to add prawns & mix well. Cover and cook for few seconds.

9. Once prawns are done, do a taste test.

10. Now add a handful of curry leaves and drizzle few drops of coconut oil .

11. Cover the pan with a lid. Open it only after few minutes so that the flavor of curry leaves will blend nicely along with coconut oil into the curry. Enjoy.

PRAWNS AND MANGO CURRY

                              KONJUM MANGA
                                          


 












Recipe:Traditional Kerala Cuisine
Cooking with my friend Lekshmi Prakash

INGREDIENTS

 Prawns-100 g
Raw mango-1 medium size
Turmeric powder-1/2 tsp
Salt to taste

For Grinding
Coconut scraping from half of a coconut
Dry red chillies-2
Shallots-3 to 4
Turmeric powder-1/2 tsp
Coriander powder-1 tsp

For Tempering
Oil(prefer coconut oil)- 1 tbsp
Mustard seeds-1 tsp
Curry leaves-1 sprig

Method

1.Clean and de-vein the prawns.

2.Peel the skin of the mango/or not need to de-skin (as per your choice) and chop them into big chunks.

3.Take a vessel add prawns,mango pieces,salt,turmeric powder and bring them to boil(till prawns and mangoes are well cooked).

4.Meanwhile using the ingredients given under "grinding", make a coarse paste.Keep aside.

5.Once prawns are done add the ground paste into it and cook for few minutes. Taste and adjust the salt and spice powders.Take off from the lame.

6.Do the tempering and add into the above made curry.Give it a toss and enjoy.. :)


PRAWNS MASALA

                           KERALA STYLE Prawns Masala



RECIPE:KERALA CUISINE
COOKING WITH SISTER Lakshmi Girish

 Ingredients 

Prawns-100 g
Onion-2 medium sized
Tomato-2 medium sized
Ginger one inch piece
Garlic-5/6 pods
Curry leaves-1 sprig
Green chilly-2
Chilli powder-1 tsp
Eastern meat masala-1 tsp
Oil-1 tbsp
Salt 
Cilantro/coriander leaves for garnishing

Method
1.Clean and  remove  the vein  of the prawns.

2..Heat half the oil in a kadai,add ginger garlic and saute.Now add finely chopped onions and saute till they turn translucent.

3.Now add tomatoes and prawns.Cook till prawns is done.

4.Now make a hole in the center pour in the remaining oil and spice powders(you can add other spice powders like coriander powder or chicken masala or prawns masala itself,it depends upon your need and taste).

5.Now mix everything.

6.Saute for few more minutes till everything gets mixed up nicely. Do a taste test  and adjust the salt.

7.Garnish with coriander leaves and Enjoy.
