Breakfast smoothie 1

                                                   Quick &Vegan Smoothie 1
                                                                           
Serves 1
Ingredients

Weet bix-2
Cashew milk-1/2 cup
Water -1/2 cup
Brown sugar as per your preference
Banana-1
Chopped nuts and banana slices to garnish

Note: If you want to skip water ,its perfectly fine .Instead add 1 cup of milk of your choice.

Method

1.Take all ingredients in a blender and blend it till smooth and creamy.

2.Garnish it with some chopped nuts and banana slices.Enjoy.

Coriander coffee

                   Malli kaapi/kothambari kaapi/


This coffee was first introduced to me yesterday when we visited AVEES PUTTU HOUSE,in Onnamkara near Changanassery.It was included in the Puttu(steamed rice cake,once of the authentic dishes of Kerala) thali we ordered.Since then we were eager to try out at home and this was the result.
Karupeeti is rich in calcium,iron and vitamins and can be used by people of all ages whereas coriander seeds aids in digestion,rich in calcium,iron ,has antibacterial properties and thus goes its endless benefits.So guys pen down this easy and healthy coffee recipe..


Serves:4
Ingredients

Water- 2 3/4 cup (makes 4 glass)
Coffee powder-1 tsp                                  Roasted coriander powder-1 tbsp heaped
Karupatti/palm gur- 3 tbsp heaped

:feel free to adjust the ingredients

Method

:Roast the coriander powder till nice aroma is felt.Be careful not to burn it.

:Now heat 4 glasses(2 3/4 cup) water in a pan by adding karupatti. Once it starts bubbling add in coffee powder along with coriander powder.Let it boil for a minute or two.

:Do a taste test.If it is not sweet upto mark add in more karupatti and boil it slowly on low flame.

:if the taste of coriander is not felt add in more powder.

:adjust the ingredients according to your taste.

:If you wish you can add little pepper powder for a slight spiciness and if you add dried ginger you will get dry ginger coffee/sukku malli kaapi.

:Best cup of coffee to sip and enjoy on any time of the day...!!!

Papaya smoothie with goodness of oats and nuts

                                       Papaya smoothie

Makes 3 glasses
 
Ingredients

To blend

Papaya slices  1 cup
Oats-1/2 cup (more or less quantity according to your preference.I used instant oats.)
Cashews-4 to 5
Sugar- 4 to 5 spoons(adjust accordingly)
Almonds-4 to 5

To garnish

Almond/slivered ones(your choice)                                        Note:Can increase or decrease the ingredients as per your choice.
       :If you take 1/2 cup of oats the taste of oats will be prominent.So be careful you can decrease the quantity of oats and can prepare the same dish

Method

:Blend all the ingredients under the label 'to blend" in a mixie jar.

:Do a taste test  and adjust the ingredients.

:Our filling and healthy meal is ready to serve.

:Garnish with almonds and serve as such or little chilled.ENJOY...!!!

Cucumber Mint Cooler

                                Cucumber mint cooler
          

Makes 4 glass
Ingredients

4 to 8 ice cubes
4 glass of water

To blend
Salad cucumber -3 small sized
a handful mint leaves
juice of 1 1/2 lemon(medium size)
5 to 7 spoons of sugar                                                

 To garnish
4 small lemon wedges
12 salad cucumber circles to garnish

Method

1: chop the cucumber into chunks,wash and clean the mint leaves,extract the lemon juice
 
2.Add all these into a mixie jar along with sugar to taste and blend to a smooth paste.Do a taste test and adjust.
 
3.Now divide this syrup into 4 ,  add 1 glass of water into each serving glass along with cucumber slices and lemon wedges ,garnish them with slices and pour in ice cubes.
 
4:Our drink is ready to serve.ENJOY..!!!

Pineapple lemonade

                 Lemonade with a twist/Kulukky sherbet
                        

Kulukki sherbet is a popular street food throughout Kerala .Kulukky menas shaken ,this sherbet is made by shaking all the ingredients in a bottle& hence the name.This recipe was shared by my dear friend PRIYA.R.SHENOY in a popular food group.Thanking her for this spicy tangy sweet yet refreshing recipe loved by all my family members.. <3

Makes 4 glass


Ingredients

Finely chopped pineapple-1/3 cup
Finely chopped ginger-1 tbsp
Green chilies chopped-4
Sugar syrup made with 1 glass of water and 6 spoons of sugar
Honey 1 tsp
Water 4 glass
Lemon juice from 1 1/2  medium sized lemon
 Ice cubes as needed

    All the above ingredients can be adjusted freely according to the taste of your family members.

Method

1.Take all the above ingredients except ice cubes in a shaker or any plastic bottle and shake well for 30 to 40 seconds.

2.Do a taste test and adjust the ingredients.Drop in 2 to 3 ice cubes and shake well for one last time.

3.Pour the sherbet in serving glass,drop in 2 to 3 ice cubes and decorate with a small piece of pineapple on the rim of the glass and serve...ENJOY...!!!

COLD COFFEE

                              COLD COFFEE
                                  
Serves:2
Ingredients
Coffee powder- 1 1/2  tbsp
Water-1/4 cup
Ice cubes- 4 to 5
Sugar- 2 to 3 spoons
Milk- 2 glass of chilled milk
Note :adjust the ingredients according to your taste..

Method

1.Take a tablespoon of instant coffee powder in a bowl ,add 1/4 cup of water and beat it well till it becomes frothy.

2.Pour this into a mixie jar & beat once.

3.Add 4 to 5 ice cubes and 2 to 3 spoons of sugar and beat again.

4.Now add 2 glass of chilled milk and beat 2 to 4 times.

Note:don't forget to check in between for sweetness.Can add sugar if it is not enough.

5.Pulse , till it becomes frothy.

6.Serve as such or can be chilled before serving.ENJOY...!!!!

Sharjah shake

Sharjah shake (chocolate banana milk shake)


It's been a quite long time since this drink is on my to do list.But finally it happened today when my hubby bought the HERSHEY'S chocolate syrup and our home grown plantain turned yellow and we were craving for something sweet & chill & chocolicious. Without making you guys wait jot it down..

Ingredients

Chilled milk-  2 cups
Ripe banana (small ones)- 4
Sugar- 5 spoons
Drinking chocolate powder- 5 to 6 tsp
Chocolate syrup -->add generously    
Ice cubes-4

To garnish
Broken Cashews
Chocolate syrup

Method

1.Blend the bananas, sugar,chocolate powder ,syrup and ice cubes till they become smooth and creamy.
2.Pour in the milk and blend well.
3.Transfer them into the serving glass garnish with cashews and chocolate syrup..
4.Enjoy..!!!!

Shallot ginger lemonade

                                             Shallot ginger lemonade


Serves-1
Ingredients

Lemon juice from one lemon
1 tsp of sugar
a small piece of ginger
2 small shallots
1/4 + 3/4 cup of water

ice cubes and lemon rings optional for garnishing

Method

1.Grind together, in a mixie jar, a small piece of ginger,2 small shallots,juice of one lemon,1 tsp of sugar (as per your sweet tooth) and 1/4 cup of water.

2.Now strain this juice into the serving glass.

3.Add 3/4 cup water into it and Enjoy

NOTE:
          Can add ice cubes if u prefer.

         Don't add big ginger piece as it will dominate the flavor of shallot which we don't want.


4.Before serving just do a taste test to find if we wanna add lime juice.

SPICY BUTTERMILK

Serves-1
Ingredients

Curd/yogurt/thayru/thaak-1/2 cup
Water-1/2 cup
Ginger/adrak/inji/alae-1/2 tbsp
Shallots/pearl onions-3 -4
Curry leaves/kady patha/karivepila/karbhapathy-a handful
Green chillies-2
Salt to taste
  Feel free to increase or decrease the amount of ingredients according to the taste of your family members

Method
1.Crush ginger,shallots and green chilies using a mortar and pestle

2.Beat curd ,water and salt in a mixie jar, now  into it  add all the crushed ingredients.Pulse it two or three times.

3.Do a taste test.It should have that spiciness of ginger and chillies. Transfer it into serving khullads or glasses.Enjoy.

Passion fruit juice

Serves:1
Ingredients

Passion fruit-1                          
Water-1 cup
Sugar-1 tsp                                                                       
 Ice cubes -2(optional)

Method

1.Cut the fruit into 2 halves.

2.Scoop out the flesh from both the halves and pour into the glass.

3.Add in a teaspoon of sugar.

4.Pour a glass of water too and mix well till the sugar dissolves.

5.Add 2 ice cubes into it.Our juice is ready to serve.                    
Note: It contains Vitamin C,B Vitamins-riboflavin and niacin ,dietary fiber as well..

Banana nuts milkshake

 Serves: 1

Ingredients for blending

Banana-2
Milk-1 glass
Sugar-1tbsp
Cashews-4
Almonds-4
Vanilla ice cream(store bought)-35 ml

For topping

Hershey's chocolate syrup-1 tbsp
Raisins/kismis-4/5
Vanilla ice cream-35ml

Method

1. Take all the ingredients for blending in a blender. Blend it to a smooth puree.

Ingredients                                

Milk- 1 glass
Sapota/chikoo-2 medium sized
Almonds-5/6
 Sugar -1-2 tsp

METHOD

1. Keep ready all our ingredients. Don't forget to remove the seeds and peel off the skin of chikoo.

                        

2.Take all the ingredients in a blender. Blend it well. Our milkshake is ready to serve.

3. If chikoo is so sweet then you can avoid sugar and make your drink still healthier.Enjoy.

APPLE AND DRY FRUITS MILKSHAKE

APPLE &DRY FRUITS MILKSHAKE

Serves:1
Ingredients

Milk -1 glass
Dates-3
Almonds/badaam-7
Sugar-1 tbsp
Apple-half of a normal apple

Method

1. Remove the seeds from the dates. Peel the skin off the apple. Keep   all the ingredients ready.
INGREDIENTS
2. Now take everything in a blender.
                                                   
      3. Blend it well once for few seconds. Open and check for apple or dates chunks. If there are then blend it again till we get a lump-less puree.
                                                      

 4.Our refreshing drink is ready to serve in a jiffy...
                                                 

5. Garnish with almond slices.

Almond yogurt drink

Ingredients

Almond/badam drinking mix-4 tsp
Sugar-3 tsp
Vanilla essence-1/2 tsp
Yogurt/curd-1/2 cup
Water-1/2 cup

Method

1. Take all the ingredients in a blender/mixie and blend for few seconds.

2. Our refreshing drink is ready to serve. Enjoy.. :)

Note: 2 tsp of sugar and almond drink mix will also give good result. But as we like little intense flavors we added more of it.You are free to adjust the quantity of ingredients according to your taste.

Boost yogurt drink

Ingredients

Curd/yogurt-1/2 cup
Water-1/2 cup
Boost-3 tbsp
Nutella-1 tsp
Chocolate syrup-2-3 tsp(optional)
Sugar-2 tsp (optional)

For garnishing
Boost-1/2 tsp
Chocolate syrup-1 tsp
 Method

1. Take all ingredients in a blender and blend it for 2-3 minutes

BLACK MINT TEA

                           BLACK MINT TEA

SERVES :2
INGREDIENTS

Water-2 glasses
Sugar-2 tsp
Tea leaves-1/4 tsp
Mint leaves-10

METHOD:

Boil water in a saucepan once it starts boiling add sugar ,tea leaves and turn the flame to medium .
Give a stir,then add the mint leaves .Stir once again and bring it to boil.Switch off the flame ,strain and enjoy on a rainy day .(a change from usual black tea)TO FILL YOUR MIND AND SOUL.
